Two note fields, on purpose
Colour and cutting are separate fields on the client, not one blob of text somebody has to read through while the client is waiting. The formula, the developer, the timing and the correction that fixed it last time sit in one; the length, the layers, the fringe they regretted and how they actually wear it sit in the other.
Allergies where you cannot miss them
Allergies are their own field on the record and are shown with the client, not buried in a note. That is the one piece of client information where being one screen away is not good enough.
Encrypted, because it is personal
Notes, phone numbers and dates of birth are encrypted in the database rather than sitting in plain text. Client records are personal data and a salon carries real obligations for them — that is a reason to store them properly, not a reason to keep them in a notebook.

Can any stylist see the notes?
Anyone with a seat in your salon can, which is the point — the note is only useful if the person covering a shift can read it. What the record cannot do is leave your salon: accounts do not share client data with each other.
What happens if a client asks me to delete their data?
You can delete a client, and consent choices are kept as a history rather than a single current flag, so you can show what they agreed to and when.
Can I see what a client had last time without opening the booking?
Yes. The record carries the appointment history, so the last service, the stylist who did it and the notes from it are all on the client rather than scattered across past bookings.
